Do say this: 

Normal, or
Normality

Why?: 
The correct usage is to say, for example, "a state of normality" or "things returned to normal." "normalcy" is not a real word, although it is widely inserted by those who don't realise it's a made-up expression by those who don't bother to learn proper English.
